What does the transition from dinner to dancing actually look like when you are running sound and MC?

I keep the music present but not loud during dinner, then once the formalities wrap I walk the floor and raise the volume naturally. I often invite the wedding party up for a group number to bridge the gap, so it does not feel like a forced start.

Can you handle a crowd where half wants Latin and the other half wants classic rock?

I build a set that moves between those worlds by finding tracks with a groove both sides can move to, and I do not commit to one lane until I see who is actually on the floor. At a venue like this, you have to mix for the whole room, not just one table.
