How do you decide when to push the dance floor in a room that starts as a dining space?
I read the tables, not the clock. When guests start turning in their chairs toward the music, that's my cue. I'll bring the tempo up a few notches, but I keep a few slower ones in my back pocket in case the room needs a minute.
